1) What is the optimal temperature for storing herring?
35-38 degrees Fahrenheit is the optimal range for keeping herring.

2) How long is it safe to keep opened smoked salmon in the refrigerator?
The expiration date on the package is the expiration date for use. We cannot guarantee safety beyond that point. In other words, you can think of the expiration date as the "use by date."

3) Can I freeze my smoked salmon after I have bought it?
Every time a food product is frozen it loses quality (generally color and texture suffer). The freezing process; however, will not pose microbiological risks.

If a package of food product is placed in a freezer directly after purchase, it can be kept frozen for a few weeks or months depending on the product. We do not recommend keeping smoked salmon in a home freezer for over two months.

If more product is purchased than the consumer wishes to eat right away, it is possible to remove some for refrigerated storage and freeze the rest in small packets. Again, it is important to remember that freezing may impair quality, and the salmon should not be kept frozen for more than two months.

4) Are all of your products certified Kosher?
All of the products manufactured in our Chicago and West Virginia plants are certified kosher. A few of our co-packaged items are not kosher. If you are unsure check your product 's packaging for the kosher symbol of a u with a circle around it.

5) My herring is usually firm in texture, why has it become mushy?
The general cause for herring to become "mushy" is temperature abuse (i.e. exposure to temperatures over 40 deg. F). A good indicator of "mushiness" for the herring in wine sauce is if the jar is cloudy instead of clear. Sometimes herring, with a very high omega-3 content, is softer than fish with the usual omega-3 content.

6) We have bought your herring for years. Why does the label say it contains wheat? I don't see a wheat-containing ingredient. I am on a gluten-free diet and cannot eat wheat.
We are now required to put "wheat" on our label under allergens, because the suppliers of our vinegar do not certify that wheat is NOT present in the vinegar. The vinegar is distilled from grain which may include wheat. The distillation process results in a distillate that contains none of the wheat protein, gluten, that could cause an allergic response or adverse affect in people with celiac diseases for example. (These individuals have gluten intolerance).

Since each individual is different, you and your physician/nutritionist know what is best for your own health. An individual should always seek the counsel of his or her own health professional(s).

7) The label for herring in cream sauce states that there is modified starch in the product, where does this come from?
The modified starch comes from corn (not wheat or any other grain). It is used to provide texture and stabilize the sour cream.

8) Why are your shipping prices on seafood products so high?
In order to keep our seafood at the highest quality we have to ship our seafood products out with next day delivery, which is expensive. Vita Food Products, Inc. always wants to ensure that you have the highest quality product and will not settle for anything less. To keep seafood at an optimal temperature the seafood products must be shipped "next day delivery."

9) Why are there two websites, vitafoodproducts.com and vitaspecialtyfoods.com, and does it matter which one I order from?
We have two different divisions at Vita, and therefore we have had two websites. Both websites are owned by the same company, and therefore it does not matter which you order from.

10) What are omega-3s?
Omega 3's are fatty acids that are found in fish oils. The omega-3 fatty acids provide health benefits. The American Heart Association suggests eating fish twice a week.
